Chef Juarez has shared her Abuela’s Spicy Chorizo Tacos recipe with the world, showcasing how El Popular’s Chorizo can be used to make any person at your table one of the ‘familia’.   • Makes: 8 servings

Ingredients

  • 1/2 link (3 oz.) El Popular “Super-Picante” Chorizo

  • ¼ link (1.5 oz.) El Popular “Mild” Chorizo

  • ½ lb of ground pork

  • 1/2 lb of ground beef

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/2 tsp black pepper

  • 1/2 tsp cumin

  • 2 small diced potatoes

  • 1 1/2 cups of water

  • 12 taco soft shells (corn or flour)

  • Our Super Picante Chorizo is pretty hot, so feel free to use any one of our Chorizos to make this dish if super spicy food isn’t for you.

Directions

  • Brown all meats on med-high heat in a large pan.

  • Once meat is brown, add the diced potatoes, all the spices, and 3 cups of water.

  • Put the pan on low heat and simmer until the potatoes are tender and water is all gone.

  • Fill the soft shell tacos with a few tablespoons of meat and potato filling.

  • Garnish with green salsa, cheese, tomatoes, lettuce, sour cream, and cilantro etc. We recommend using El Popular Mole Sauce!

Chorizo 101

  • Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico.

  • Unlike Spanish Chorizo — Mexican style is soft, raw, uncured, and uncooked.

  • Similar to how Americans view bacon, Chorizo is a versatile ingredient one can use to enhance any dish!

Directions

  • Remove casing from Chorizo links.

  • Place desired amount in a non-stick skillet.

  • Break-up Chorizo while cooking at medium heat.

  • Sauté for 7-8 minutes until the Chorizo is fully cooked or the internal temperature has reached 165 degrees (F).

  • Enjoy on or in any dish.
