Snack-a-licious. Bruschetta is an Italian snack that is made of tomatoes, meat, and more that is spread on toasted bread. We at El Popular decided to mix things up a bit by adding our famous Chorizo to this traditional recipe. So, at your next party or light dinner, try out these Chorizo Bruschetta Bites for a savory taste of heaven.

  • Makes: 6 Servings

Ingredients

  • 1 link (6 oz.) El Popular “Original” Chorizo

  • French bread, cut into ½ in. slices

  • ½ cup light brown sugar

  • 8 plum tomatoes (diced)

  • 8 yellow tomatoes (diced)

  • 1 large bunch fresh basil, chopped

  • 3 lemons, sliced

  • Garlic, minced to taste

  • 1 brick of mozzarella cheese, in small cubes

  • ½ cup red wine vinegar

  • 1 ½ cup olive oil

  • Salt & pepper

Directions

  • Preheat oven 350 degrees.

  • Remove Chorizo from casing and cook in a large pan until browned, drain well until dry.

  • Mix brown sugar into the Chorizo, set aside in a large bowl.

  • Add tomatoes, basil, lemon juice, garlic, and cheese to the bowl. Mix vinegar and oil, add thyme, salt and pepper to taste, and add to bowl. Put in refrigerator to chill.

  • On a sheet pan, lay out French bread slices, brush with olive oil and toast in oven until lightly toasted.

  • Cool and put on a platter.

Chorizo 101

  • Chorizo is a spicy sausage believed to have come from Ancient Rome and later adopted by the Spaniards who brought it to Mexico.

  • Unlike Spanish Chorizo — Mexican style is soft, raw, uncured, and uncooked.

  • Similar to how Americans view bacon, Chorizo is a versatile ingredient one can use to enhance any dish!

Directions

  • Remove casing from Chorizo links.

  • Place desired amount in a non-stick skillet.

  • Break-up Chorizo while cooking at medium heat.

  • Sauté for 7-8 minutes until the Chorizo is fully cooked or the internal temperature has reached 165 degrees (F).

  • Enjoy on or in any dish.
